Smoked corn chowder
INGREDIENTS

2 tablespoons neutral or olive oil

1 tablespoon unsalted or semi-salted butter

1 medium red onion, finely diced
-
1/2 tablespoon garlic
-
1 small bay leaf
-
1 tablespoon smoked paprika
-
1 tablespoon Cajun spices
-
2 stalks celery, diced
-
1 medium red bell pepper, finely diced
-
250 ml 35% cream
PREPARATION

In a large pre-heated pot (medium), add oil and butter.

Add garlic, onion, celery and bell bell pepper. Sauté for 4 to 5 minutes, until they begin to soften.

Add spices and bay leaf.

Add corn, cream and stock. Bring to a low boil.
-
Reduce heat to medium and simmer for 15 minutes.
-
Add the flour diluted in the water, stirring constantly, and continue cooking for 2 to 3 minutes.
