Smoked corn chowder

INGREDIENTS

  • 2 tablespoons neutral or olive oil

  • 1 tablespoon unsalted or semi-salted butter

  • 1 medium red onion, finely diced

  • 1/2 tablespoon garlic

  • 1 small bay leaf

  • 1 tablespoon smoked paprika

  • 1 tablespoon Cajun spices

  • 2 stalks celery, diced

  • 1 medium red bell pepper, finely diced

  • 250 ml 35% cream

PREPARATION

  1. In a large pre-heated pot (medium), add oil and butter.

  2. Add garlic, onion, celery and bell bell pepper. Sauté for 4 to 5 minutes, until they begin to soften.

  3. Add spices and bay leaf.

  4. Add corn, cream and stock. Bring to a low boil.

  5. Reduce heat to medium and simmer for 15 minutes.

  6. Add the flour diluted in the water, stirring constantly, and continue cooking for 2 to 3 minutes.
